Abstract
While no one disputes that quotes cannot be from unknown texts, Biblical scholars maintain the thousands of variants of the Biblical books, but accept the NT quotes of the Church Fathers
Councils Before the Sixteenth Century
From the fifth century, according to F. F. Bruce, The Canon of Scripture (1988) p. 215, the New Testament canon was unanimous in the Roman church and The Cambridge History of the Bible (volume 1) p. 305 is in agreement: by “the 5th century, both the Western and Eastern churches had come into agreement on the matter of the New Testament canon.” Therefore, the New Testament canon was universal, in both the western and the eastern churches, for a thousand years before the Reformation.

The Council of Trent
The fourth session of the Council of Trent, in the year 1546, thought it would be appropriate “that a list of the sacred books be inserted in this decree, lest a doubt may arise in any one's mind, which are the books that are received by this Synod.” We appreciate the helpful list, yet, we wonder who would have any doubt of the universally recognized New Testament. The books are:
“Of the New Testament: the four Gospels,... the Acts of the Apostles ...; fourteen epistles of Paul the apostle, ... two of Peter the apostle, three of John the apostle, one of the apostle James, one of Jude the apostle, and the Apocalypse of John the apostle.”
The third session in the year 1546 documents the ancient and universal Nicene Creed. The seventh session (1547) discusses the seven ancient and universal sacraments. Due to the reiterations of universal and centuries old beliefs, it seems that the early Protestants are more pernicious than realized today.
In summation, the canon of the New Testament was recognized for over a thousand years by the Roman Church and Orthodox Churches.
